Albacore
Tuna

Our
Albacore
Tuna
are
caught
by
fisherman
that
insure
their
fish
is
of
the
highest
quality.
The
fish
are
landed
carefully
to
minimize
bruising
and
bled
out
to
enhance
the
mild
flavor
and
preserve
the
natural
white
color
of
the
flesh.
The
tuna
is
put
into
the
boat's
hold
and
frozen
solid
within
three
hours
from
the
time
they
are
caught.
The
Albacore
Tuna
is
delivered
to
our
cannery
and
processed
in a
unique
way
that
is
unlike
the
way
it's
done
in
high
production
canneries.
The
large
canneries
precook
their
tuna
to
speed
up
the
processing
and
have
to
add
oil,
broth
or
water
to
regain
the
moisture
in
their
fish.
They
usually
use
fish
that
were
frozen
with
a
salt
brine
and
not
bled.
This
makes
for
a
fish
that
is
higher
in
sodium
and
stronger
in
taste.
We
cut
our
tuna
by
hand
from
uncooked
fresh
fish
and
it
is
then
packed
by
hand
with
no
additives,
except
sea
salt
when
requested.
It
is
then
cooked
in
its
own
natural
juices
that
are
low
in
calories,
fat
and
sodium.
This
process
also
makes
our
tuna
high
in
protein,
B
vitamins
and
Omega-3
fatty
acids.
Smoked
Albacore
Tuna
- We
process
our
Smoked
Albacore
Tuna
the
same
way
as
the
fresh
fish,
except
we
put
it
into
our
Alder
Wood
smokehouse
for
a
short
time
before
it
is
put
into
the
cans.
We
also
add
a
touch
of
soybean
oil
to
replace
some
of
the
moisture
lost
while
the
tuna
is
being
smoked.
Fresh
Chinook
Salmon
-
Our
troll
caught
Chinook
(King)
Salmon
are
delivered
into
our
cannery
fresh
daily
during
the
summer
months.
They
are
hand
filleted
to
remove
the
skin
and
bones,
then
packed
and
cooked
in
cans
the
same
way
as
the
albacore
tuna.
The
meat
and
juices
from
this
salmon
are
very
rich
in
the
Omega-3
fatty
acids,
protein
and
vitamins
making
it a
delicious
and
healthy
treat.
Smoked
Chinook
Salmon
-
When
selecting
salmon
for
smoking,
we
choose
only
troll
caught
Chinook
(King)
Salmon
because
of
its
excellent
quality.
We
process
the
salmon
by
hand,
just
like
the
fresh
fish,
except
we
give
these
fish
a
light
smoke
from
our
native
Alder
Wood.
The
salmon
is
then
canned,
capturing
the
natural
juices
of
the
fish
itself.
This
is
the
same
process
used
on
all
of
our
other
smoked
and
canned
fish.
Dungeness
Crab
and
Oregon
Shrimp
-
Our
Dungeness
Crabs
are
delivered
live
to
us
from
our
local
fisherman.
Within
a
very
short
period
of
time
they
are
cooked,
picked
from
the
shell
and
canned.
We
add
a
light
brine
of
citric
acid
to
preserve
the
natural
color
and
flavor
of
the
meat.
Our
Shrimp
is
canned
with
the
same
process
as
our
crab.
There
are
others
who
can
shrimp
meat
but
few
who
use
the
high
quality
Oregon
Shrimp
meat
we
do.
Oysters
- We
raise
our
Oysters
on
our
farm
from
the
larvae
stage
to
mature
oysters.
Our
oysters
are
grown
on
our
own
beds
in
the
clear
clean
waters
of
Coos
Bay,
Oregon.
They
are
harvested
and
brought
into
out
plant
daily
for
processing.
We
sell
them
at
our
market
live
in
the
shell,
shucked,
smoked
and
also
canned.
Our
oysters
may
be
shipped
fresh
via
UPS
overnight
or
second
day
air,
as
can
any
of
our
fine
seafood
products.
