The canning process preserves the meat which allows you to put them on the shelf and eat them later if you so choose. These oysters are personally grown by the Hampel family themselves, Chuck’s owners. Jack Hampel founded Coos Bay Oyster Co. in 1987. His three sons, Bryson, Heath and Jess, grew up picking oysters off the Coos Bay mud flats. Heath is now the operator of Chuck’s and Jess oversees their oyster operation. This means every oyster purchased at Chuck’s has been handled from seedling to storefront by the Hampels. The hatchery is literally across the street from the store. How many seafood markets can say that?
